The Gregorian calendar may still be a few weeks away from summer, but we’re already planning our summertime meals and cooking in full swing. We’re heating up the grill for succulent picanha steak and tender teriyaki chicken thighs, preparing sides that are perfect for potlucks like Japanese potato salad and Texas caviar, and creating stunning desserts like a Summer Berry Galette using the wealth of the season. These are the May recipes that we absolutely adored and can’t wait to make again this summer.
01. Picanha grilled with piri piri
If you haven’t tried picanha before, this simple dish from Junior Borges might persuade you to expand your grilling skills to include the tender and reasonably priced cut. A bright, spicy-sweet sauce is paired with simply seasoned meat.
RECIPE
- 1 (3-pound) whole picanha, preferably Wagyu
- 1 tablespoon flaky sea salt, plus more for serving
- 1 teaspoon black pepper
- 1/2 cup extra-virgin olive oil, divided
- 2 cups finely chopped red bell pepper (about 2 bell peppers)
- 1 tablespoon minced garlic (about 3 cloves)
- 1/2 teaspoon kosher salt, divided, plus more to taste
- 1/2 cup thinly sliced scallions (about 3 scallions)
- 1/2 cup packed chopped fresh flat-leaf parsley
- 1/4 cup finely chopped shallot
- 2 tablespoons red wine vinegar or Cabernet vinegar
- 1 teaspoon thinly sliced malagueta chiles or red Thai chiles (about 3 small chiles)
